To get juicier cutlets, you don’t have to grind the meat into minced meat, but simply chop it very finely with a knife. The structure will be coarser, but it will retain meat juice better. This also applies to onions.

You should not use clean meat for cutlets. You need a piece that has at least a small layer of fat. The fat will melt and prevent the meat from drying out, otherwise the balls will turn out very tight and will fall apart.

Onions are used for juiciness, but they can be replaced with other products: zucchini, pumpkin, carrots, etc. You need to grind these products using a meat grinder, especially carrots. In addition, this way the dish takes on a completely different color.

It is advisable to take stale bread. You can use yesterday’s bread or even replace it with breadcrumbs. Then, after soaking, it will be evenly distributed in the minced meat, otherwise it may gather in one lump.

Delicious ground beef cutlets cook very quickly, but can be an addition to a variety of side dishes and salads. Both adults and children love this nutritious and moderately high-calorie dish. And if you serve it with white or red garlic sauce, the whole thing will be eaten in one sitting!

  • After all the liquid has been absorbed into the bread, pass it through a meat grinder or beat it with a blender (I knead it with my hands) and transfer it to a bowl with onions.
  • Salt the bread and onion mixture and pepper to taste. For flavor, you can add a little nutmeg and Italian herbs (mixture). Mix everything well.
  • Combine with ground beef, mix well with your hands and beat a little.

  • Let the ground beef patties sit for at least 10 minutes.
  • Heat a frying pan with vegetable oil over high heat: when it is well heated, reduce the heat (it should be below medium).

Prepare beetroot salad with garlic and mayonnaise.
    • Boil the beets in advance and store them in the refrigerator (they are used to prepare many dishes).
    • Grate 2-3 small boiled beets on a coarse grater into a bowl or salad bowl.
    • Add 2 chopped cloves of garlic there (pass through a press or grate on a fine grater).
    • Salt and pepper to taste, add a couple of tablespoons of mayonnaise and let it brew (20-30 minutes).
    • Serve the prepared salad with any meat dish.

Preparing mashed potatoes. I think that every housewife has her own recipe for making puree, but I still want to tell you about mine.

    • Place the peeled and washed potatoes in boiling water and cook for 20-25 minutes from the moment of boiling (the readiness of the potatoes can be checked with a clean wooden skewer). Salt it 5 minutes before turning off.
    • Drain all the water from the potatoes and mash them with a potato masher (the old-fashioned way), or you can use a blender.
    • Everyone knows the classic recipe: pour hot milk with melted butter into potatoes. I don't argue, it turns out delicious. But…
    • If you like airy, tender, snow-white puree that does not lose its taste even when it cools or sits, add mayonnaise to the potatoes. And mix well with a masher. The quantity is up to your taste. I use about 2-3 tablespoons of mayonnaise per kilogram of potatoes.

    To make delicious ground beef patties, you need a minimum of ingredients. It's no secret that beef is much tougher than pork or, for example, chicken. When choosing meat in a store, you should try to avoid pieces that contain a large amount of membrane.     • minced meat - 500 g;
    • potatoes - 1 piece;

Place the grated potatoes over the meat, add salt and pepper. Stir the egg in a bowl and combine it with the cutlet mixture. Mix everything thoroughly.

Form the resulting mixture into small patties. Place them in a preheated frying pan with oil.

Fry the cutlets over medium heat on the stove until golden brown. And then turn it over to the other side, reduce the heat and cover with a lid. Fry them until done.

Ready-made cutlets can be served with a side dish on portioned plates. Potatoes or rice are suitable as a side dish.

    - flour or breadcrumbs for breading.

    Preparation of minced meat

To make truly tasty meat cutlets, you will need to take good meat, in which the fat content will be up to 30% for pork, and 10% for beef or lamb. Before making minced meat, it needs to be cooled. You should make sure in advance that the knife of the meat grinder is sharp, and you need to take a grate with large holes. This measure will not allow the meat to lose its juice and properties.

As soon as the minced meat is ready, finely chop the onion and fry it until golden brown in vegetable oil. Then you need to grate the raw potatoes on a medium grater. As soon as the onion has cooled a little, it should be added to the minced meat along with the potatoes, beat in the egg. In addition, at this stage salt, pepper to taste and soda are added. It is very important to mix all the ingredients so that the spices are evenly distributed throughout the minced meat. Then cold water is added to the mixture and everything is thoroughly kneaded until smooth. After this, cutlets are formed and breaded in flour or breadcrumbs.

    Frying

As soon as the cutlets are ready, they should be placed in a frying pan with vegetable oil and fried for 30 minutes. To make the dish more juicy, you should slightly change the frying technology. So, first, the cutlets are fried in a frying pan for a minute on each side over high heat to form a golden brown crust. The raw material for preparing cutlets is not always meat or poultry, since this dish can also be prepared for vegetarians, as well as with a low salt content. This is why cutlets have such a large number of fans.

The most popular meatless cutlet recipes

As the main ingredient for vegetarian cutlets, you can take dried peas (for 2-3 servings you will need 4-6 glasses), which must first be soaked in cold water, then boiled and passed through a fine meat grinder along with 1-2 cloves of garlic. To the resulting minced meat you need to add a chopped onion (if desired, you can pre-fry the vegetables), a little black pepper, a third of a glass of flour, a raw egg, then mix all the ingredients thoroughly. Salt - to your taste. The resulting formed balls must be rolled in breadcrumbs and fried for just 5 minutes in a frying pan with vegetable oil. Sour cream and finely chopped herbs are perfect for this dish.

Dried bean cutlets are prepared in almost the same way. The duration of soaking the beans (2 glasses for a couple of servings) is 7-8 hours. Then they need to be boiled, passed through a sieve and mashed into a puree. After this, you need to add parsley or dill, finely chopped onions, a little grated low-fat cheese, a fresh egg and black pepper to the crushed beans. The formed bean cutlets must be rolled in flour and fried over medium heat for 5-7 minutes. Using the same recipe, you can replace beans with lentils.

Wheat grits as the main ingredient in non-meat cutlets can also be an excellent solution. First you need to cook porridge from 200-250 grams of cereal, then cool it. You will also need to fry 100-150 grams of mushrooms along with chopped onions. Then you should mix all the ingredients and add to them a little white bread pulp (you can pre-soak it in milk or plain water) and 4 egg yolks. There is no need to pour out the whites, as the formed vegetarian cutlets will then be rolled in them. They are fried for just a few minutes until a crust appears. Serving this dish together with green salad leaves will look great, and wheat groats can be replaced with buckwheat.
Semolina combined with cottage cheese, then fried into cutlets, can also be an excellent dish. So, you should first cook the semolina in milk (about 8 teaspoons of cereal per glass). Then you need to add a tablespoon of butter to the porridge, break a chicken egg and mix all the ingredients thoroughly. Before cooking, cool the porridge, form it into hollow cutlets, fill them with cottage cheese and roll in flour. These cutlets are fried for only 3-4 minutes.

    Burbot cutlets

Burbot cutlets are one of the most delicious fish dishes. It is better to use minced meat without unnecessary additives. Instead of salt, you can use fish seasoning. The dish turns out very tasty and tender.

Remove the skins from the onions, cut off all excess with a knife, rinse and finely chop on a cutting board. Place the bread pulp in a medium bowl and cover it with milk. You can tear the pieces with pre-washed hands.

Add an egg, burbot fillet, and onion to a cup of bread. Pepper and salt the entire mass, and then mix it thoroughly until smooth. The result will be something like minced fish.

Make cutlets from minced meat, heat a frying pan with oil. Fry the cutlets on both sides until they are completely cooked. During frying, turn the products several times with a wooden or plastic spatula. Be sure to cover the pan with a lid while cooking.

Along with the burbot cutlets, cook peeled potatoes in salted water. When finished cooking, drain the water and mash it into a puree, adding hot milk, butter and egg. Serve hot cutlets with mashed potatoes in portioned plates along with tomatoes, herbs and sour cream.

Cutlets made from not very fatty types of chicken, veal, pork, and fish will definitely need to be included in the children's menu, as the baby is growing up, and meat dishes contain a lot of proteins required for growth. Although it should be remembered that feeding meat to children has its limitations.

    Instructions

“How to make cutlets appetizing?” worries every mother. It should be remembered that if the baby is not prone to various allergic reactions, then the bread for making cutlets must be soaked in milk. Among other things, you can add a variety of spices to the minced meat, which will definitely give the cutlets a refined aroma and taste: basil, nutmeg, oregano.

Pass the meat without fat and films through a meat grinder.

Add well-wrung out bread soaked in milk or water (only the pulp) and pass through the meat grinder a second time.

Add salt to taste. Add cold water and oil.

Knead the mass very well, a wooden spoon is best; the mass should be very soft and smooth.

Place the minced meat on a board soaked with water. Start forming the cutlets, giving them an oblong or round shape.

Place the prepared cutlets in a steamer and steam for 4-6 minutes on each side. Once ready, place them in the oven for 5-6 minutes.

In the absence of a double boiler, steamed cutlets can be prepared as follows: Place the cutlets in a not very large saucepan without handles, pour over the broth, and cover with a lid. Place in another pan half filled with boiling water.

Keep in the oven for half an hour.

Serve with chopped boiled vegetables or with vegetables in the form of a delicious pudding.

Fried cutlets can be given to children only after 1 year, because when they are fried in oil, a crust is formed, which is difficult for a child’s delicate stomach to digest.

The question of why cutlets fall apart when frying is asked by many housewives. In order for the cutlets to cook well, you need to observe several points. And the main one is the correctly selected proportions of ingredients for minced meat.

About the importance of minced meat consistency

Cutlets are one of the most important and popular dishes on the everyday table. A holiday feast is rarely complete without them, and almost any housewife considers it her duty to be able to cook tasty, juicy and beautiful cutlets. But in order for them to turn out that way and not fall apart during the frying process, you need to know some important aspects of their preparation.

The main reason why cutlets fall apart is the incorrect consistency of the minced meat. You need to try to keep it not liquid and not very greasy. To achieve this consistency, you can add additional ingredients to the minced meat.

    White bread

This ingredient has become an almost integral part of any cutlet recipe. To add bread to the minced meat, you first need to soak it in warm boiled water (not milk!). The approximate ratio of bread and meat is 20% and 80%, then the minced meat turns out to be the most successful and tasty. Another important point is that the bread should be hard or even stale and not have burnt crusts.

    Semolina

If the housewife does not have bread in the house, but has semolina, then it is quite suitable for adding to minced meat, and the result will be no worse.

For a kilogram of minced meat, take a tablespoon of cereal, which is thoroughly mixed with the meat, and then the whole thing is left for several hours - so that the semolina swells.

    Potatoes and other vegetables

Instead of bread or semolina, you can add potatoes, carrots, cabbage, etc. to the minced meat. Vegetables are grated on a fine grater and mixed thoroughly with the meat. Such ingredients will add an interesting unique taste to the cutlets.

    Eggs

It is best to use only yolks, as experienced housewives advise. However, this only applies to meat cutlets. Eggs can be added to fish or vegetable cutlets along with the whites, that is, whole.

The most important thing is not to overdo it with the amount of eggs used, otherwise the finished cutlets will turn out like rubber and will be very difficult to eat.

What, besides composition, affects the quality of cutlets?

To prevent the cutlets from falling apart during frying, you need to thoroughly mix the minced meat until smooth.

If everything is fine with the minced meat: it is mixed well, it contains bread or other additional ingredients, but the cutlets still fall apart when frying, then you can try reducing the amount of oil in the frying pan.

It is equally important to carefully turn the cutlets, and it is better to do this with not one, but two spatulas.

    Beating minced meat

Another equally important way to achieve strong and beautiful cutlets is to beat the minced meat. When beating, the meat fibers soften, the minced meat becomes a homogeneous smooth mass, and not pieces stuck together. Plus, after beating, meat juice is formed, and the cutlets are crusty on the outside and very juicy on the inside.

Beating minced meat is not difficult. If there is a lot of meat, it is better to divide it into several not very large parts. From each part you should make a flat, but not thin cutlet, which will later need to be thrown hard on the table.

Of course, it is best to do this on a flat and wide cutting board so as not to stain the countertop with meat.
You should throw the meat at least 20 times, and preferably about 40. The goal of this action is to ensure that the meat does not crack upon impact, but spreads over the surface. This way you can achieve smooth, soft and uniform minced meat.
Cutlets made from such minced meat will definitely not fall apart when frying.

Tip 1: How to steam cutlets without a steamer

Steamed dishes are very useful for those who are on a diet for aesthetic or medicinal purposes. Even meat fits well into such a diet, because it can also be easily steamed. For steamed cutlets, it is best to use lean, tender meat such as veal, but you can also make them, like traditional cutlets, from beef, pork, or a mixture of ground beef and pork.

    You will need

      • Meat (veal) - 400−500 g
      • or 200−250 g of beef and 200−250 g of pork.
      • Egg - 1 pc.
      • A piece of bread is about 1/3 of a loaf.
      • Milk - 1 glass
      • Medium potato - 1 pc.
      • Medium onion - 1 pc.
      • pepper to taste.
      • Meat grinder.
      • Large saucepan with a lid.
      • Large sieve or colander.

    Instructions

The most convenient way to cook steamed dishes is in a double boiler. But if you don't have a steamer, you can easily do without it. To do this, you will need a large saucepan with a lid and a metal colander or sieve, preferably one with a flat bottom. The diameter of the sieve should be slightly smaller than the diameter of the pan, so that it fits easily into it.

Cut the meat into large pieces and grind through a meat grinder. Also mince the potatoes and onions.

Pass the minced meat through the meat grinder again.

Cut the crusts from a piece of bread and soak the crumb in milk.

Break the egg into a separate bowl and beat it with a fork.

Place the minced meat in the bowl where the bread is soaked, add the beaten egg, stir, add salt and pepper to taste. Mix thoroughly again. You can also add spices to taste.

Scroll the resulting mass through a meat grinder a third time.

Make cutlets from the resulting minced meat. It is best to make them small, a little larger than a walnut - this way they cook faster and look better. Place the formed cutlets in a sieve or colander.

Pour water into a saucepan and place it on the fire. Place a colander or sieve with cutlets on top. The water must not touch the bottom of the sieve!

When the water boils, reduce the heat. Cook the cutlets for about 30-40 minutes.

Cutlets are a common dish for any family. They are very often served for lunch or dinner. Sometimes a cold cutlet becomes a morning sandwich. Usually the cutlets are served with pasta or potatoes, but sometimes a salad or nutritious sauce is served instead of a side dish. When they say cutlet, people usually think of a product made from minced meat; there are many varieties of cutlets. Cutlets that are cooked in a double boiler are much healthier than fried ones. But rarely does anyone want to cook such food, thinking that it is tasteless.

Mixed minced meat, which I most often cook for my family, can also sometimes get boring, and then this simple recipe for delicious and juicy beef cutlets comes to my rescue. As you know, beef contains less fat than pork, and this fact has both positive and negative sides. On the one hand, less fat and, accordingly, more protein make this meat less caloric and more beneficial for the body, but on the other hand, beef dishes are often dry, hard to chew and therefore less tasty.

In order for the beef cutlets to be soft, juicy and very tender, a large amount of onions and carrots fried in butter is added to them. Fragrant vegetables retain some of their juices and give minced meat a pleasant taste and airy consistency. The cutlets turn out so fluffy and tender that they simply melt in your mouth, and in addition, they carry all the benefits of natural beef. After all, this meat contains a record amount of iron and easily digestible protein, and therefore must be included in the diet of children and adults of all age groups. Try making the juiciest beef cutlets using this simple recipe, and you will get a tasty and healthy main dish that the whole family will love!
