I put the ham maker in the oven, turn it on 150 degrees for 2 hours, and then 125 degrees for 1 hour.
Time is over. I take the ham maker out of the oven and run cold water from the tap over it to quickly cool. Then I put it in the freezer for the same purpose for half an hour.

My actions to forcefully cool the product led to the fact that the fat quickly thickened and a coat of jelly formed around the meat, because the rather weak press was unable to squeeze out the thickened liquid part.


It didn’t turn out what I wanted, but it wasn’t a marriage either. The taste of the product resembles something between stew and boiled pork.

The minced meat is cooled in the freezer until lightly frozen. For salting, I use a salting mixture containing sodium nitrite in a 1:1 ratio with regular salt. Dose 20 g/kg. Spices to taste. 150 ml ice water. I knead all this with my hand wearing two rubber and cloth gloves (otherwise my hand will fall off from the cold). After 2-3 hand movements, the water magically disappears and is absorbed into the minced meat. I knead until the minced meat turns into one dense mass, all the pieces of minced meat stick together.
I put the minced meat in the refrigerator to mature. It can be for a day, or it can be for five; the longer the minced meat ripens, the more sausage flavor the final product gets. But you need to keep in mind that microbes don’t sleep either, and if the temperature in the refrigerator is more than 8 degrees, you shouldn’t risk it and it’s better to limit it to 1-2 days. In order not to make minced meat every time, you can immediately prepare several kilograms of minced meat, salt it, and put it in the freezer in these ziplock bags. The minced meat must be distributed throughout the bag while squeezing out the air and closing the lock. You will get a layer of minced meat 3-4 cm thick, which will not take up much space in the freezer


A day has passed, I take the minced meat out of the refrigerator and stuff it directly into the ham maker with a masher, without any bag, like the guys from YouTube. Fits 1150g.


But that's it. Actually, according to the instructions, the capacity is 1000 g. If the minced meat is placed directly into the ham maker, I recommend placing a piece of cling film between the piston and the meat, otherwise you will then have to pick out the minced meat from the holes on the piston with a toothpick


I set the thermometer and put the ham in the oven. In addition, I place a baking sheet on the bottom of the oven and fill it with water.


I first set it to 50 degrees to adapt the cold minced meat for 1 hour. Then I set it to 80 degrees for 2 hours. If your oven has forced convection (built-in fan) then there will be no problems. But in a conventional oven, the temperature inside the loaf at 80 degrees does not rise above 62 degrees. Therefore, you have to raise it to 90 -95 degrees, only then the temperature inside the loaf will reach the required 72 degrees. This will take another half hour.

The second option is to cook the ham by placing it in a pan of water. Water has a large heat capacity and there is no need to do tricks with temperature here, but devices that will maintain a constant temperature of 80 degrees in a container with a ham maker are not nearly as common as electric ovens.

Finally, the long-awaited 72 degrees on the thermometer. I remove the ham from the oven and immediately into cold water. Here it will cool faster to an acceptable temperature.


I open the lid and pull the spring, judging by the video on YouTube, the loaf stuck to the piston should come out behind it. But it was not there. The piston calmly came off, leaving the loaf inside. I did everything I could to pour hot water over the ham maker, and shook and knocked, all in vain. And you just had to run a narrow knife in a circular pattern along the walls.

Small cavities on the entire surface are pockets of broth edema, acceptable for a homemade product. But unevenness in the base is a consequence of loose packing, you need to be more careful.

I'm doing this setup. I set the temperature on the thermostat to 79.5 degrees, hysteresis 1.5 degrees. I turn it on and the process begins.




2 hours and 20 minutes passed and the ham thermometer showed the desired 72 degrees, much faster than in the oven. I’m cooling it. I’m trying to get the sausage out of the ham maker in the same way as the ham, but it didn’t work out that way. The loaf didn't want to go outside. Only after repeated shaking and cutting around with a knife was it possible to remove the loaf, which had been fairly cut with a knife.


Conclusion - under no circumstances should you load small minced meat directly into the ham maker. Be sure to use a baking sleeve or similar. Yes, and it’s better to make ham up your sleeve, too.
Nevertheless, the sausage turned out, although with small pockets of broth swelling, it was unusually dense compared to the meat-processing plant. But the taste is exactly the same - sausage.

One more thing - when adding pieces of lard to minced meat, you need to scald them with boiling water, I knew this, but I didn’t do it on purpose. And indeed, unscalded pieces of lard tend to fall out when cut.
Well, it's time to wrap things up.
If you use the ham maker regularly, then working with it will not cause any inconvenience, all operations will be worked out. The possibility of not using expensive sausage casings and a sausage stuffer very quickly pays for the seemingly high price. Attached to the ham maker was a booklet with supposed recipes. But there were no recipes, just photos of dishes that can be prepared in this device.


The ham maker is very reminiscent of a large can of stewed meat... But the metal is still stainless steel and thicker than that of a tin can. Initially it was covered with white plastic film, which did not come off completely, as it was clamped at the edges; I had to pull it out piece by piece with tweezers.

Well, in this case, I’m not interested in making ham, since this piece of iron is absolutely not needed for cooking. To test the subject, I decided to make lumpy boiled pork from chicken legs.

Here you need to approach the choice of raw materials carefully; my first attempt to cook boiled pork ended disastrously.

For the first time, I bought huge cheap frozen broiler legs for 99 rubles per kg and started cooking in the same way as described below. And I noticed that a lot of liquid was leaking out, and the meat was somehow shrinking a lot. How so? And only after all this I read the composition on the label - chicken legs + soy protein!!!.. And the legs are only for frying. There it is, Mikhalych. The leg is injected with soy protein. And this protein can hold up to 6 liters of water per kg! Not only people, but also pets refused to eat the result of my work from this raw material. Then he fed it to the poor street mongrels.

From 1.7 kg of chilled chicken legs I got 1.2 kg of pulp. Of course, you could buy chicken breasts, it would be easier, but their meat is lean and not suitable for boiled pork. In the legs, fat is present in the right amount. And it’s also important that the legs have a lot of skin, and during heat treatment it produces gelatin, which binds the finished product. I add 1.5% salt to the meat, 3 cloves of garlic per kg, and 4 g/kg black pepper. I mix everything and send it to the ham maker; I don’t soak it first, because I don’t see the point. The meat will simmer in the oven for several hours, which is more than enough to be properly saturated with salt and the smell of spices.


I estimate how much meat there is and install the lower disk in the cylinder on the second of three levels so that the springs stretch as much as possible. Take a baking film and lay it along the walls.


I don’t chop the meat additionally, I fill the cylinder with pieces large and small, which were obtained during the breaking up. Now we can say for sure that the 2nd level includes exactly 1200g.


I put the second disc and tension the springs opposite each other. The device is ready for use.


I put the ham maker in the oven in some kind of dish, since during the cooking process the springs will squeeze out both liquid and fat.
I turn on the oven at 120 degrees and simmer the meat for 4 hours. According to GOST, boiled pork is baked at 120 -150 degrees for 3-5 hours.


I take out the ham maker, the top disk has dropped to the middle of the slots.


Weighed it - weight loss 350 g.


I cool it for 12 hours. And here is the result. Long-term heat treatment did its job. The taste is very similar to pork boiled pork.




The product turned out to be quite dense, cut into thin circles without falling apart. Well, if you cut it very thin, a piece may fall off, as in the video. It has an intense smell of boiled pork. And the most important thing is that everyone respects boiled pork so much - the product melts in your mouth.

Another masterpiece cooked in a ham maker is pressed beef.


Pressed beef is a brutal product, so you don’t have to bother cutting off fascia and other connective tissue; during heat treatment, all this becomes not only edible, but also useful as a source of hyaluronic acid, in addition, it gives a colorful pattern on the cut.

The temperature and cooking time are the same: 120 degrees - 4 hours. But ordinary salt is mixed with nitrite salt 1:1 so that the meat does not turn out gray.

Due to the heterogeneity of the product, the salt was absorbed unevenly and the result, IMHO, was a beautiful, original pattern. Gray islands are visible in the middle, this is what the whole piece would look like if not for the nitrite salt. Some say she is harmful. Perhaps this is true, but provided that within a 500 km perimeter around you there is not a single industrial enterprise, exhaust gas or other joys of civilization, and you do not use fire, because there is smoke, and there are much more harmful substances in it. A concentration of 0.6% sodium nitrite in salt is allowed in Europe, and this is where thousands of livestock are being destroyed because of a bullshit virus. What I mean is that in discussions about the harmfulness of nitrite, there is more paranoia than common sense.

It turns out that preparing ham, boiled pork or sausage at home is very simple; usually you do not need any special equipment for this. And the result is always pleasing! Let's take pork tenderloin, or tenderloin, or neck. We rinse thoroughly, cut off all excess and unnecessary.

Since I have a thin long cut, I fold it in half and wrap it with thread. You can use a special culinary thread, but this is not important. If you have a good thick piece of pork, then you can safely skip this point.

Place in a pan - pork, peeled onion, carrots, a bunch of parsley, bay leaf and peppercorns. Fill all this beauty with water and add salt. Cover loosely with a lid and boil for 25-30 minutes after the water boils. After the allotted time, we remove the meat from the broth, which, by the way, can be used for its intended purpose - to cook an excellent rich soup.
