To make the dough "breathe", sift the flour and add a teaspoon of semolina to it. In order for the dough to be elastic, add a few drops of vegetable oil to it.

STEP 1

For the test: in bowl of the kitchen machine mix all ingredients except flour, knead at maximum speed until sugar and salt dissolve. Add flour, knead for 5 minutes at medium speed and at the end a couple of minutes at maximum speed.

Divide the dough into 4 equal sized pieces and form each into a ball. Lay out at a distance from each other and leave for 1 hour at room temperature to increase the volume of the ball by 15-20%. Refrigerate for 4-5 hours.

Dough. Dissolve yeast and honey in warm water, add oil, add salt. Gradually adding flour, knead a soft, elastic, pleasant dough. Round, put in a clean bowl greased with vegetable oil, cover with cling film and put away for an hour and a half in a warm place (you can put it in the oven by turning on the light bulb there).


When the dough has increased in volume at least twice, we knead it, roll it into a round layer. Lubricate the dough with sour cream, evenly lay out peeled and cut pears on top. We lay out the gorgonzolla, broken in small pieces. Spread the mozzarella evenly.


Leave for half an hour for the dough to come up.
